85g Fresh Basil Leaves
3 Cloves of Garlic
50g Pine Nuts
Around 40 - 60g Grated Parmesan
Around 150mls Extra Virgin Olive Oil
1 Tbsp Fresh Lemon Juice
Salt and Pepper to taste
1. Combine Basil, Garlic, Pine Nuts, and Parmesan in a bowl of a food processor. Blitz all together while pouring the Olive oil through the spout of the food processor until desired consistency.
2. Add Salt and Pepper to taste
It makes 250ml. Store in an airtight container in the fridge for up to a week.
To reduce the cost of this dish here's some substitutions we can make
- Switch Pine nuts for Sunflower Seeds/Walnuts
- Switch Extra Virgin Olive oil for Rapeseed Oil
Vegan Substitution - Switch Parmesan for Nutritional Yeast, around 3-4 Tbsp
