VEGAN MAC & CHEESE
This is such a great twist on a classic dish. It's packed full of flavour and worth the wee bit of extra preparation. Once you've made it once you'll want to make it all the time.

Vegan Mac & Cheese

Ingredients:
300g Pasta of choice
180g Cashew Nuts (Soaked for 2hrs)
3 Tbsp Nutritional Yeast
100g Chestnut Mushrooms
2 Tbsp of Breadcrumbs
1 Onion - chopped
3/4 Cloves of Garlic - minced
1/2 tsp Dijon Mustard
2 tsp Coconut Oil
Salt and Pepper to taste

Method:

1. Preheat oven to 180 degrees (if including this step)
2. Cook pasta as per instructions and drain - set aside
3. Fry onion and garlic until onions becomes translucent - set aside in separate bowl
4. Fry mushrooms in the same pan as the onions and garlic until golden and slightly crispy
5. Drain cashew nuts and add to a food processor or blender and blitz - add onion/garlic mix, mustard, nutritional yeast and a couple Tbsp of water - blitz - taste and season with salt and pepper to your liking
6. Combine cooked pasta, cashew sauce, and mushrooms - mix well - add water if you prefer a thinner consistency - the dish can be served at this stage
7. Add to oven proof dish, sprinkle with breadcrumbs and pop in the oven for 18-20mins
