BASIL PESTO

This is such a quick and easy recipe that is useful to have in your recipe book. 5 ingredients and 5 minutes to make! Package free, and organic! Once you've made it once you'll want to make it all the time.

Basil Pesto Recipe

Ingredients:

​

85g Fresh Basil Leaves

3 Cloves of Garlic

50g Pine Nuts

Around 40 - 60g Grated Parmesan

Around 150mls Extra Virgin Olive Oil

1 Tbsp Fresh Lemon Juice

Salt and Pepper to taste

Method:

​

1. Combine Basil, Garlic, Pine Nuts, and Parmesan in a bowl of a food processor. Blitz all together while pouring the Olive oil through the spout of the food processor until desired consistency.

​

2. Add Salt and Pepper to taste

​

It makes 250ml. Store in an airtight container in the fridge for up to a week.

​

To reduce the cost of this dish here are some substitutions we can make 

​

- Switch Pine Nuts for Sunflower Seeds/Walnuts

- Switch Extra Virgin Olive oil for Rapeseed Oil

​

Vegan Substitution - Switch Parmesan for Nutritional Yeast,

around 3-4 tbsp
