Orange Polenta Cake 


Not only is this cake gluten-free but it is simple and very moreish. Get ready for it to become a dinner guest favourite.

Orange Polenta Cake Recipe

Prep Time: 5mins 

Cooking Time: 45mins

Total Time: 50mins 


Cake Ingredients

2x large unwaxed oranges (zest)

200g ground almonds

100g polenta (I use Biona)

200g unsalted butter

200g dark brown sugar

3x eggs

1x tsp baking powder


Syrup Ingredients

5x cardamon pods (crushed)

250ml squeezed orange juice

125g golden caster/cane sugar



  1. Whip the sugar and butter together, add the eggs and mix before adding the remaining cake ingredients including the zest of 2x oranges.

  2. Pop into a lined baking tin and bake at 160 fan for 45 mins.

  3. Once baked leave to stand for 10 mins before removing it from the tin

  4. When the cake is in the oven you can make the syrup.

  5. Add all ingredients into a small saucepan and simmer on medium heat until it thickens slightly. Turn off and leave to cool.

  6. Once the cake has been removed from the tin, pour the syrup onto the cake (you can pierce holes in the cake to aid absorption).


Enjoy with a little cream!
