BULGUR WHEAT SALAD
This is such a quick and colourful dish! It's filling, full of flavour and a nutritional lunch or dinner. Once you've made it once you'll want to make it all the time.

Bulgur Wheat Salad

Ingredients:
130g Bulgur Wheat
225ml Stock
1 Bell Pepper - Chopped
2 Spring Onions - Chopped
100g Cherry Toms - Halved
1/4 of a Cucumber - Chopped
Drizzle of EVOO
Squeeze half a lemon
Salt & Pepper to taste

Method:

1. Cook Bulgur Wheat (Put Bulgur Wheat & Stock in a pot, simmer for 10mins - after 10mins turn of heat, pop on lid and set aside for 10mins
2. Chop all your lovely veggies
3. Fork the bulgur wheat to separate and add to bowl, combine with the veggies, olive oil, lemon juice and salt and pepper.
4. Serve
